π Happy Hump Day bright stars! βοΈ You’ve made it over the hump and it’s easy gliding until the weekend π I have spent the last two days at another dam site, this time out in the open in record winds, mixed with rain + hail πͺβοΈβοΈ BUT on my drive in super early this morning, I saw a beautiful sunrise π
for which I felt both privileged and grateful. What are you grateful for today? π

π OMBRΓ PURPLE SWEET POTATO NICE CREAM BOWLS π

2 sweet potatoes, cooked + peeled
3 bananas, chopped + frozen
2/3 cup frozen blueberries
1/3 cup almond milk
1/3 cup @enjoyyoso coconut yogurt
1 tbsp maple syrup
1/2 tsp cinnamon
2 tbsp @noudderprotein (optional)

*Optional chia pudding layer:
2 cups coconut milk (canned)
1/2 cup chia seeds
.
If desired, combine chia pudding ingredients and refrigerate minimum 2 hours, then divide between bowls. Blend nice cream ingredients together until smooth, gradually adding more purple sweet potato + blueberries to achieve 3 purple ombrΓ© @coconutbowls. Top with coconut, blueberries + chocolate-dipped strawberries π
